Yumiko's Home Cooking YAKISOBA

JAPANESE STIR FIRED NOODLES

Yakisoba (焼きそば) is the Japanese version of stir-fried noodles. The noodles are stir fried with sliced pork and plenty of vegetables and then coated with a sweet and mildly spicy sauce that distinguishes it from other Asian stir-fried noodles.

Yakisoba is one of the most popular street foods in Japan, and Yakisoba stalls can always be found at festivals.

Prep Time: 5 mins Cook Time: 15 mins Total Time: 20 mins

Ingredients (tbsp=15ml, cup=250ml)

  • 300g/10.5oz yellow noodles (note 1)
  • 1 tbsp sesame oil
  • 2 tbsp oil (vegetable oil or peanut oil)
  • 200g/7oz pork thinly sliced into bite-size pieces (note 2)
  • 60g/2oz carrot thinly sliced diagonally
  • 100g/3.5oz cabbage cut into bite-size pieces (note 3)
  • 3 shiitake mushrooms sliced into 2mm/ 1/16" thick
  • 2 stalks green onions diagonally sliced
  • 1 cup bean sprouts
    • YAKISOBA SAUCE (note 4)

    • 40ml/1.4oz Bulldog tonkatsu sauce
    • 50ml/1.7oz Bulldog usuta sauce
    • 1 tsp soy sauce
    • ½ tbsp tomato ketchup
    • 1 tsp sugar
    • ½ tsp dashi seasoning powder diluted in ½ tsp hot water (note 5)
